Un-carbon fined, unpasteurized, undiluted, nakadori sake, Tsuzuki, is available from Kodama Jozo in very limited numbers as seasonal sake. We only make Tsuzuki in Nama because it is expressed best unpasteurized. Nakadori means “middle fraction of the filtration” where texture and taste of sake are stabilized and smooth during pressing. Very aromatic of fruit and flowers, refreshing and somewhat citric. Very complex with layers and balanced sweetness and acidity. Always keep refrigerated and serve chilled in wine and sake glasses.
Tsuzuki means “Moon floating over Port”. Perfect and romantic to drink while enjoying the moon.
Food pairing: All alone. Food friendly. Aperitif with white fish sashimi, lobsters and shrimp, clams. Sushi, Grilled meat and vegetables. Roast beef. Hard and soft cheese.
