The Seafood range were originally intended to be enjoyed with oysters, the local delicacy of our home region of Akitsu, Hiroshima. The secret to the unique flavour profile is the use of white koji rather than the orthodox yellow koji. This produces a juicy, pronounced, citrus-like acidity which has proven to be the perfect match for a much wider range of tomato based umami rich foods.

This sparkling version, achieved through an extended in-bottle fermentation, pairs particularly well with fried foods, such as calamari, gyoza and tempura. In summary, Seafood Sparkling offers more versatility than most other sparkling sake, and is equally at home on the dinner table as it is served in a champagne glass when raising a toast.
